How to Cook Tofu So It Actually Tastes Good
Most people who hate tofu have only had badly prepared tofu. Here's how to make it crispy on the outside, tender on the inside, and actually flavorful.
Step 1: Press the Tofu
This is the most important step. Tofu is full of water, and water is the enemy of crispiness.
- Wrap tofu block in paper towels or a clean kitchen towel.
- Place on a plate, put something heavy on top (a cast iron pan, heavy books).
- Press for 15-30 minutes. Replace wet towels halfway through.
- For extra-firm tofu, 15 minutes is enough. For firm tofu, press 30 minutes.
Step 2: Cut and Season
- Cut into 1-inch cubes, slices, or triangles.
- Toss with 1 tablespoon cornstarch (this creates the crispy coating).
- Add seasonings: salt, pepper, garlic powder, smoked paprika, or whatever you like.
Step 3: Cook It Right
Pan-Frying (Best for Beginners)
- Heat 2 tablespoons oil in a nonstick pan over medium-high heat.
- Add tofu in a single layer. Don't crowd the pan.
- Cook 3-4 minutes per side until golden and crispy.
- Don't move it around too much. Let it develop a crust.
Baking (Easiest)
- Preheat oven to 400°F (200°C).
- Toss pressed, seasoned tofu with oil.
- Spread on a baking sheet in a single layer.
- Bake 25-30 minutes, flipping halfway, until golden and crispy.
Air Frying (Fastest)
- Preheat air fryer to 375°F.
- Arrange tofu in a single layer.
- Cook 12-15 minutes, shaking basket halfway.
Step 4: Add Sauce
Crispy tofu + sauce = amazing. Try these:
- Teriyaki: Soy sauce + mirin + sugar + ginger
- Buffalo: Hot sauce + melted butter
- Peanut: Peanut butter + soy sauce + lime + sriracha
- BBQ: Your favorite BBQ sauce
- Sesame: Soy sauce + sesame oil + rice vinegar + honey
