Easy Lunch Recipes You Can Meal Prep on Sunday

Buying lunch every day adds up fast โ both in dollars and in decision fatigue. A solid Sunday meal prep routine can save you $50-100 per week and eliminate the daily "what should I eat" panic. Here are our favorite lunch recipes that hold up beautifully in the fridge.
The Container Formula
A great meal-prep lunch has four components: protein + grain + vegetable + sauce. Layer them in this order (sauce at the bottom, greens at the top) and you'll never have a soggy lunch again.
1. Mediterranean Chicken Bowls
Grilled chicken breast, quinoa, cucumber, cherry tomatoes, red onion, kalamata olives, and crumbled feta. Drizzle with lemon-tahini dressing. Makes 5 lunches. The quinoa absorbs the dressing overnight and tastes even better on day three.
2. Asian Sesame Noodle Jars
Layer in a mason jar: sesame-ginger dressing at the bottom, then shredded carrots, edamame, cold soba noodles, shredded rotisserie chicken, and mixed greens on top. When you're ready to eat, shake it up. Makes 4 jars.
3. Burrito Bowls
Cilantro-lime rice, seasoned black beans, corn salsa, pickled red onions, and grilled chicken or carnitas. Top with fresh avocado on the day you eat it. Makes 5 bowls. Way better than Chipotle and a fraction of the cost.
4. Italian Pasta Salad
Rotini with salami, mozzarella pearls, cherry tomatoes, bell peppers, and Italian dressing. This one's served cold and actually improves after a day in the fridge. Makes 6 servings.
5. Thai Peanut Wraps
Spread peanut sauce on a large tortilla, layer with shredded cabbage, carrots, cilantro, grilled chicken, and crushed peanuts. Wrap tightly in foil โ these stay fresh for 3 days. Makes 4 wraps.
How to Actually Stick With It
Start small โ prep just 3 lunches this week, not 5. Pick recipes that share ingredients (if one uses cilantro and lime, pick another that does too). And most importantly, schedule the time. Sunday 4-6 PM is meal prep o'clock. Put on a podcast, pour a drink, and knock it out.
